Lawyer here ✋ ... I saw some confusions so I'l try to clear them . 1, only a judge can decide on a case thus a police can't prove or disprove anything, just collects evidence so there is not such thing as a proved case before going to court.
2, regardless if we know our client is guilty or not before starting the case ( in majority of the cases we do) and regardless of the millions of evidence that show it, we always start by saying our client is not guilty , that's a procedural must.
3, and about trying to find holes in the law, you're right we sometimes do that but that's actually kinda rare meaning only in commercial or some other cases can you find a hole, it's really hard to find a hole in criminal cases because the law is sorta clear , again there may be an exception.
4, as for your main question , cases aren't as black and white as you see them in movies , in 99% cases we don't have a clear bad guy and good guy. Our main aim as a justice system is equity. So to get equity we need to get to the bottom of the case and since law is very technical we need to represent the bad guys so that they tell their story correctly and after hearing both sides the judges tires to strick a balance as to compensate the victim and also give what the criminal deserves, and he would've gotten more than he deserves if we don't represent him . All I'm all we're not trying to help criminals in that strict sense , just trying to find justice and balance.
